Ingredients
Approx. 4 tablespoons oil
1 tsp salt
1 large onion, diced
3-4 cloves fresh garlic, chopped fine
3-4 heaping tsp curry powder or more, to taste
5-6 pieces boneless chicken breast (about 2 pounds), diced into bite sized cubes
5-6 medium sized potatoes, peeled & cut in cubes
Water or chicken broth (or a combination of the two)
Equipment
- Big knife & cutting board
- Large pot or wok
- big spoon
- In a large saucepan or wok, fry the onion, garlic, curry powder, salt and oil for approximately 3-5 minutes. Make sure not to burn. Remove from pot.
- Fry chicken in same pot until almost cooked.
- Add potatoes and onion curry mixture into the pan. Add water or broth until everything is barely covered.
- Simmer for about 45 minutes until the sauce starts to get a thick gravy like consistency
Serve over rice
