Quick And Easy Chicken Curry

This recipe takes approximately 15 minutes of prep time and about 45 minutes to cook. 

Ingredients

Approx. 4 tablespoons oil
1 tsp salt
1 large onion, diced
3-4 cloves fresh garlic, chopped fine
3-4 heaping tsp curry powder or more, to taste
5-6 pieces boneless chicken breast (about 2 pounds), diced into bite sized cubes
5-6 medium sized potatoes, peeled & cut in cubes
Water or chicken broth (or a combination of the two)

Equipment
  • Big knife & cutting board
  • Large pot or wok
  • big spoon
Procedure

  1. In a large saucepan or wok,  fry the onion, garlic, curry powder, salt and oil for approximately 3-5 minutes. Make sure not to burn. Remove from pot.
  2. Fry chicken in same pot until almost cooked.
  3. Add potatoes and onion curry mixture into the pan. Add water or broth until everything is barely covered.
  4. Simmer for about 45 minutes until the sauce starts to get a thick gravy like consistency

Serve over rice

Makes 6 servings
