You can have homemade soup in under a half hour, using pretty much anything you have laying around the kitchen. Just make sure you have a can or two of chicken broth in the house at all times.
Ingredients
(all except the broth are optional but you'll want at least 2-3 of them to make a hearty soup)
- chicken broth (1 can or 2 cups instant with water added according to package directions)
- fresh vegetables and/or potatoes, chopped
- canned or frozen vegetables
- can of beans or chick peas
- can (14 ounce) of diced tomatoes
- small handful of rice or pasta (cooked or uncooked; if uncooked it will expand as it cooks)
- handful of cooked chicken or any kind of meat, chopped
- herbs and/or spices
- pot
- spoon
- Heat up the broth in the pot over medium high heat. Add vegetables and cooked rice or pasta (if using) and herbs/spices and cook until vegs are tender (10 minutes or so)
- If using uncooked rice or pasta, add them and bring the soup to a boil, then simmer until done (about 20 minutes for rice, 10 minutes for pasta)
