Ingredients
- 1/2 c rice
- 1 1/2 tsps basil
- 1 (540 g) can lentils
- 1 tbsp sugar
- 1 c cheese, grated (any kind)
- 2 c chicken or vegetable broth (can use water)
- 1/2 tsp cinnamon
- 1 (540 g) can crushed tomatoes
Equipment
- microwave-safe dish with lid (glass or ceramic) , big enough to hold all the ingredients plus an inch or two (rice expands when it cooks)
- cheese grater
Directions
- Combine (drained) lentils, stock, basil, rice, tomatoes, cinnamon & sugar in microwave-safe casserole dish
- Cover up & microwave on HIGH (100%) 8-10 mins
- Continue cooking on MED (50%) 10-15 mins until rice is tender & fluffy
- Let stand covered for 5 mins, sprinkle with your choice of cheese
