Microwave Spanish Rice and Lentil Pilaf

This dish takes about 20-15 minutes in the microwave (longer if the cheapo micro we bought you is low power)

Ingredients

  • 1/2 c rice
  • 1 1/2 tsps basil
  • 1 (540 g) can lentils
  • 1 tbsp sugar
  • 1 c cheese, grated (any kind)
  • 2 c chicken or vegetable broth (can use water)
  • 1/2 tsp cinnamon
  • 1 (540 g) can crushed tomatoes

Equipment


  • microwave-safe dish with lid (glass or ceramic) , big enough to hold all the ingredients plus an inch or two (rice expands when it cooks)
  • cheese grater

Directions

  1. Combine (drained) lentils, stock, basil, rice, tomatoes, cinnamon & sugar in microwave-safe casserole dish
  2. Cover up & microwave on HIGH (100%) 8-10 mins
  3. Continue cooking on MED (50%) 10-15 mins until rice is tender & fluffy
  4. Let stand covered for 5 mins, sprinkle with your choice of cheese
