
Mashed Potatoes
- Reheat-- Microwave on high for a couple of minutes. Stir in a few spoonfuls of milk if they are too stiff.
- OR make potato pancakes-- Take a handful of potato and mold into a thick panckake (1/2 inch thick or so). Heat some butter or oil (1-2 tsps) in a frying pan and fry until the first side is browned, then flip and fry the other side until browned. You may need to add more oil or butter for the second side. Good with applesauce or leftover cranberry sauce
Sweet Potato Casserole
- Reheat-- Put in baking dish in a single layer. Heat in the oven at 350F or 175C for 15 minutes until warm. Remove from oven, top with fresh marshmallows and heat in oven a few minutes more until the marshmallows are toasted.
- OR make sweet potato hash-- chop the sweets into 1/2 inch squares. Fry some onions and peppers in oil in a frying pan. When soft, add potatoes (you may need to add more oil) and fry until heated through and lightly brown. You could even add in some leftover turkey for turkey sweet potato hash.
- OR make mashed sweet potatoes-- Heat sweets in the microwave for a couple of minutes. When hot add a pat of butter and a splash of milk and mash with a potato masher until creamy. OR take it one step further and make the mashed sweets into sweet potato pancakes using the instructions above for potato pancakes.
Turkey
- Turkey sandwiches, of course
- Thanksgiving dinner redux-- heat all the leftovers and eat together just like on The Day. Add fresh veggies for a well-rounded meal.
- Turkey Chili-- use the chili recipe and substitute shredded (just pull it apart with your fingers) turkey for the chicken or beef.
- Turkey soup-- get your mom to make some for you.
Corn Muffins
- Reheat in the microwave for a 30 seconds or so OR cut in half and toast in the toaster oven.
