Crock Pot Tacos

Takes just a few minutes to set up, then cook on low all day to have fresh tacos when you get home

Ingredients
1 onion
3-4 garlic cloves
1/2 - 1 chipotle pepper (from a can) with a couple teaspoons of the adobo sauce (the more the spicier)
1/2 cup chicken broth (or any other kind of broth; water will do in a pinch)
1 lb or more of boneless chicken thighs (use thighs- breasts will be very dry) or boneless pork
Tortillas
Toppings: Salsa, avocado, guacamole, chopped onion, cheese, beans, etc.

Equipment
Knife
Cutting board
Crock Pot

Procedure
  1. Chop onion, garlic and chipotle pepper and put in crock pot
  2. Add all other ingredients
  3. Cook in crock pot on low for 6-8 hours until the chicken is falling apart
  4. Drain off excess liquid if there is a lot and shred the chicken with two forks
  5. Heat tortillas until they are soft (about 30 seconds in the microwave, wrapped in paper towel)
  6. make tacos and eat
