Ingredients
1 onion
3-4 garlic cloves
1/2 - 1 chipotle pepper (from a can) with a couple teaspoons of the adobo sauce (the more the spicier)
1/2 cup chicken broth (or any other kind of broth; water will do in a pinch)
1 lb or more of boneless chicken thighs (use thighs- breasts will be very dry) or boneless pork
Tortillas
Toppings: Salsa, avocado, guacamole, chopped onion, cheese, beans, etc.

Procedure
- Chop onion, garlic and chipotle pepper and put in crock pot
- Add all other ingredients
- Cook in crock pot on low for 6-8 hours until the chicken is falling apart
- Drain off excess liquid if there is a lot and shred the chicken with two forks
- Heat tortillas until they are soft (about 30 seconds in the microwave, wrapped in paper towel)
- make tacos and eat
