Ingredients
- Potatoes - 1 per person
- 1 Tablespoon butter or olive oil (more if using more than 2 potatoes)
- Herbs or spices-- Italian seasoning, or rosemary or paprika (optional)
- Salt & pepper
- Knife
- Microwave safe dish
- Microwave
- Plastic wrap or cover for the dish
- cut the potatoes into bite sized pieces
- if using butter, put the butter in the dish and microwave on high for about 15 seconds or until melted.
- put the potatoes into the dish with the melted butter or olive oil
- add the spices (if using) plus salt & pepper, toss until coated
- cover dish tightly (if using plastic wrap poke a few holes with a knife to let steam out)
- microwave on high for 5 minutes. Check for doneness by piercing a potato with a knife. If it pierces easily, potatoes are done. If they are still hard, microwave for another minute or so until done.
