Eggs
Cold water
Equipment
Fairly deep pot (deep enough to cover eggs with an inch of water) with lid
Stove
Procedure
- Gently put the eggs in the pot
- Fill the pot with cold water until the water is deeper than the eggs by about an inch
- Cover the pot and cook over high heat just until the water boils
- As soon as the water boils, turn off the heat and let the eggs sit in the hot water, covered, for 10 minutes
- Drain the hot water from the pot and fill the pot with cold water. Add a handful of ice cubes and let sit until the eggs are cool.
- Dry eggs off and eat or refrigerate
